Gigantes Plaki

A classic Greek dish, gigantes plaki features giant beans baked in a rich tomato sauce.

Ingredients
- 400g of giant beans
- 4-5 ripe tomatoes
- 4 onions
- 2 garlic cloves
- 200g of zucchini
- 200g of green beans
- 200g of feta cheese
- 2 tablespoons of extra virgin olive oil
- 1 teaspoon of red pepper flakes
- salt and pepper to taste
- 1 liter of vegetable broth
Method
- Rinse the giant beans and cook them for about 30 minutes in salted water. Transfer them to a baking dish.
- Sauté the onions and garlic in a tablespoon of extra virgin olive oil in a frying pan over medium heat. Add the chopped ripe tomatoes, red pepper flakes, and a good amount of salt and pepper.
- Sauté for 5 minutes, then add the green beans and zucchini, cut into pieces. Cook for another 5 minutes.
- Pour the broth into the pan and let it boil for 5 minutes. Add the giant beans and cook for 10 minutes.
- In another pan, mix the feta cheese with some broth to create a smooth sauce.
- Pour the sauce over the giant beans in the pan and mix well.
- Let it cool down, then place the gigantes plaki in a baking dish. Cover with feta cheese and bake in the oven at 180°C for 20-25 minutes.
The story
Gigantes plaki is a traditional dish that dates back to the time of Greek colonization in Egypt, where giant beans were introduced and later brought to Greece.
