Gheymeh

A traditional Iranian dish, Gheymeh is a blend of vegetables and lentils in a rich tomato sauce.

Ingredients
- 200 g of lentils
- 400 g of tomatoes
- 1 onion
- 2 teaspoons of chili dices
- 2 tablespoons of olive oil
- 1 teaspoon of sugar
- Salt and pepper to taste
- 1 tablespoon of wine vinegar
- 1 tablespoon of apple cider vinegar
- 1/2 teaspoon of cinnamon powder
- 1/2 teaspoon of cardamom powder
- 1/2 teaspoon of ginger powder
Method
- Rinse and soak the lentils, then cook them in salted water for 20-25 minutes or until tender.
- Chop the onion and garlic, then fry in a pan with olive oil until golden brown.
- Add the chopped tomatoes and cook for 10 minutes, adding a little water if necessary.
- While the tomatoes are cooking, prepare the spice mix by combining sugar, cinnamon, cardamom, and ginger.
- Add the spice mix and vinegar to the tomatoes, then reduce the sauce to a good consistency.
- Finally, add the lentils and cook for 5-10 minutes, seasoning with salt and pepper to taste.
- Serve hot with rice.
