Genoese Salted Cod

A classic of Genoese cuisine, Baccalà alla Genovese is a delightful blend of flavors.

Ingredients
- 200 g of salted cod
- 1 onion
- 2 cloves of garlic
- 200 g of potatoes
- 200 g of tomatoes
- 100 ml of olive oil
- 50 g of raw prosciutto slices
- 100 ml of white wine
- salt and pepper to taste
- 200 ml of fish broth
Method
- Rinse the salted cod and let it soak in fresh water for at least 24 hours, changing the water every 6 hours.
- Peel and dice the onion and garlic.
- In a skillet, sauté the onion and garlic in a bit of olive oil.
- Add the cubed potatoes and cook for 15 minutes.
- In a pot, blanch the tomatoes for 10-15 seconds, then cool them immediately in cold water.
- Halve the tomatoes, remove the skin and seeds.
- Add the tomatoes without skin to a bowl with the raw prosciutto and white wine, mix well.
- In a skillet, cook the salted cod for 10 minutes, then add the fish broth and tomato mixture.
- Stir well and cook for another 10-15 minutes, adjusting the seasoning with salt and pepper if needed.

Baccalà alla Genovese is a century-old tradition that dates back to when salted fish was an important part of the Genoese diet, especially during the Carnival period.
