Galician Onion Empanada

This Galician onion empanada is a deliciously crispy pastry with a sweet and fragrant filling of onions.

Ingredients
- 200g of flour
- 100g of butter
- 1 onion
- 100g of smoked ham
- 50g of sugar
- 50g of oil
- Salt and pepper to taste
- 2 tablespoons of wine vinegar
Method
- Cream the butter with the flour to form a crumbly mixture.
- Add beaten egg and a little water to form a homogeneous dough.
- Meanwhile, heat the oil in a pan and sauté the finely chopped onion.
- Add the smoked ham, salt, sugar, and wine vinegar, and mix well.
- Let the mixture cool down.
- Roll out the dough into a pie dish and fill it with the onion mixture.
- Seal the empanada and bake in the oven at 180°C for 30-40 minutes.
- Let it cool before serving.
