Fried Chorizo with Potatoes

A traditional Córdoba dish that combines the intense flavor of chorizo with crispy fried potatoes.

Ingredients
- 500g of chorizo
- 600g of potatoes
- 2 onions
- 2 tablespoons of olive oil
- Salt and pepper to taste
- 1 tablespoon of balsamic vinegar
- 2 tablespoons of tomato sauce
- 100g of grated cheese (optional)
Method
- Cut the chorizo into thin slices and dice into small pieces.
- Peel the potatoes, slice them, and rinse them in cold water.
- In a pan, sauté the onions in olive oil and add the chorizo.
- In a second pan, cover the potatoes with cold water and cook over medium heat for about 20 minutes.
- Once the potatoes are cooked, remove them and fry them in hot oil until they become crispy.
- Add the chorizo with the onions and potatoes to the pan, season with salt and pepper.
- Finally, add the balsamic vinegar and tomato sauce, mixing well.
- If desired, add the grated cheese and gently mix.
