  • 1 kg goat or sheep cheese
  • 250 ml milk
  • 1 tablespoon butter
  • salt to taste
  • oil for frying
  • cooking salt

Method

  1. Cut the cheese into small pieces.
  2. In a pan, mix the cheese with the milk and butter, adding salt to taste.
  3. Bring the mixture to a boil and cook on medium heat for 10-15 minutes, stirring frequently.
  4. Continue cooking until the cheese becomes creamy and a crust forms.
  5. Once the surface has become crispy, brush with a little oil and let it cool down.
  6. Cut the frico into regular pieces and fry in hot oil until golden.
  7. Serve the frico warm with coarse salt for garnish.
