Ingredients

  • 500 g of lamb cut into pieces
  • 2 onions
  • 2 carrots
  • 2 cucumbers
  • 1 zucchini
  • 1 tablespoon of chili
  • 200 ml of beef broth
  • 200 ml of white wine
  • 100 ml of olive oil
  • salt and pepper to taste
  • 200 g of toasted bread cut into cubes

Method

  1. In a pan, sauté the olive oil with finely chopped onions until they become golden brown.
  2. Add the carrots, cucumbers, and zucchini, and sauté for about 5 minutes.
  3. Add the chili and the cubes of toasted bread, mixing well.
  4. In a casserole, combine the beef broth and white wine, bringing to a boil.
  5. Place the lamb in a casserole with the broth and wine, cover, and cook on medium heat for about 45 minutes.
  6. Add the sautéed mixture to the casserole with the lamb, mixing well and cooking for another 10-15 minutes.
  7. To serve, add salt and pepper to taste and serve the lamb fricassee à la Gabèsian hot.
