Empanadas de Pino con Calabaza
This classic Chilean dish is a warm and delicious treat, made with pinone (a type of pumpkin) and squash, mixed with traditional spices.

Ingredients
- 200 g of pinone
- 200 g of squash
- 1 onion
- 2 garlic cloves
- 2 eggs
- 100 g of flour
- 100 g of cooking fat
- Salt and pepper to taste
- Oil for frying
Method
- Cut the pinone and squash into small cubes. Sauté them in a pan with the onion and garlic, adding a bit of oil until they are soft.
- In another bowl, mix the eggs with the flour and cooking fat until you get a homogeneous dough.
- Place the dough over the vegetable mixture and wrap into empanada shapes, sealing the edges well.
- Fry the empanadas in plenty of hot oil until golden brown.
- Serve with your preferred sauce.
