This classic Chilean dish is a warm and delicious treat, made with pinone (a type of pumpkin) and squash, mixed with traditional spices.

Ingredients

  • 200 g of pinone
  • 200 g of squash
  • 1 onion
  • 2 garlic cloves
  • 2 eggs
  • 100 g of flour
  • 100 g of cooking fat
  • Salt and pepper to taste
  • Oil for frying

Method

  1. Cut the pinone and squash into small cubes. Sauté them in a pan with the onion and garlic, adding a bit of oil until they are soft.
  2. In another bowl, mix the eggs with the flour and cooking fat until you get a homogeneous dough.
  3. Place the dough over the vegetable mixture and wrap into empanada shapes, sealing the edges well.
  4. Fry the empanadas in plenty of hot oil until golden brown.
  5. Serve with your preferred sauce.
