Eisbein
Eisbein is a traditional German dish, a delicious and warming meal made with a piece of pork belly.

Ingredients
- 1 piece of pork belly (about 3.3 lbs)
- 2 onions
- 2 celery sticks
- 2 carrots
- 100 g of parsley
- 200 ml of white wine
- 200 ml of beef broth
- salt and pepper to taste
- 1 bay leaf
- 2 dried dates
- 1 lemon
- olive oil
Method
- Cut the pork belly into pieces about 2x2 inches and set aside.
- In a large pot, heat the olive oil and sauté the finely chopped onions, celery, and carrots.
- Add the pork belly and cook over medium heat for 20-25 minutes, until the fat has rendered.
- Add the white wine, beef broth, salt, pepper, bay leaf, dried dates, and lemon juice.
- Bring to a boil, cover, and reduce heat to simmer for 2-3 hours, until the pork belly is tender.
- Finally, add the chopped parsley and gently mix.
- Serve hot with a slice of toasted bread.

Eisbein, meaning 'ice leg' in German, refers to the consistency of the pork belly fat during cold winter months. It was a popular dish in winter when pork legs were one of the more abundant meats.
