Efo Riro with Amala

A traditional Nigerian dish, rich in vegetables and sweet potatoes, served with amala.

Ingredients
- 200g of sweet potatoes, cubed
- 500g of efo vegetables (zucchini, squash, bell peppers, etc.)
- 200g of chicken or pork, cut into pieces
- 2 onions, chopped
- 2 cloves of garlic, crushed
- 200ml of palm oil
- 1 tablespoon of Guinea pepper
- 1 tablespoon of chili pepper
- 1 tablespoon of palm wine
- 200g of amala
- salt to taste
- 2 tablespoons of chopped coriander
Method
- In a large pot, heat the palm oil and sauté the onions and garlic until they are golden brown.
- Add the meat or chicken and cook until it is well done.
- Add the efo vegetables, Guinea pepper, chili pepper, and palm wine. Cover and let cook for 20-25 minutes.
- Add the sweet potato cubes and cook for another 10-15 minutes, until the vegetables are soft.
- While the stew is cooking, prepare the amala. Mix the cocoyam flour with warm water until you get a smooth dough.
- Serve the Efo Riro with a spoon of chopped coriander on top, accompanied by amala.
- Tasty and nutritious, this dish is perfect for a warm and hearty winter meal.
