Ingredients

  • 4 Duffel onions
  • 2 regular onions
  • 2 garlic cloves
  • 2 liters of beef broth
  • 200 g of butter
  • 1 teaspoon of chili
  • 1 teaspoon of salt
  • 100 g of grated gruyere cheese
  • 200 ml of cream

Method

  1. Peel and dice the Duffel onions and regular onions into cubes.
  2. In a pot, melt the butter and add the onions, cooking until they are translucent.
  3. Add the garlic and cook for another minute.
  4. Pour in the beef broth, bring to a boil and cook for 15 minutes.
  5. Dice the Duffel onions and add them to the broth, cooking for another 10 minutes.
  6. Blend the broth until smooth and strain through a sieve to get a smooth soup.
  7. Return the soup to a pot, add the chili, salt, and cream, stirring well.
  8. Serve hot, garnished with a slice of gruyere cheese.
