Duffel Onion Soup

A warm and delicious Duffel onion soup, made from the unique and world-famous Duffel onions known for their crispiness.

Ingredients
- 4 Duffel onions
- 2 regular onions
- 2 garlic cloves
- 2 liters of beef broth
- 200 g of butter
- 1 teaspoon of chili
- 1 teaspoon of salt
- 100 g of grated gruyere cheese
- 200 ml of cream
Method
- Peel and dice the Duffel onions and regular onions into cubes.
- In a pot, melt the butter and add the onions, cooking until they are translucent.
- Add the garlic and cook for another minute.
- Pour in the beef broth, bring to a boil and cook for 15 minutes.
- Dice the Duffel onions and add them to the broth, cooking for another 10 minutes.
- Blend the broth until smooth and strain through a sieve to get a smooth soup.
- Return the soup to a pot, add the chili, salt, and cream, stirring well.
- Serve hot, garnished with a slice of gruyere cheese.
