Ingredients
- 200g of dried fish, cut into pieces
- 200g of plantains, cooked and sliced
- 2 onions, chopped
- 2 cloves of garlic, chopped
- 1 tablespoon of Guinea pepper
- 1 tablespoon of cayenne pepper
- 1 tablespoon of palm oil
- Salt to taste
- 1 lemon, zested
Method
- In a pan, heat the palm oil and sauté the garlic and onions.
- Add the dried fish and cook for 5-7 minutes until it is golden brown.
- Add the plantain slices and cook for another 3-4 minutes until the plantains are soft.
- Add the Guinea pepper, cayenne pepper, and salt, stirring well.
- Finally, zest the lemon and mix it into the dish.
- Serve hot.
