Ingredients

  • 200g of dried fish, cut into pieces
  • 200g of plantains, cooked and sliced
  • 2 onions, chopped
  • 2 cloves of garlic, chopped
  • 1 tablespoon of Guinea pepper
  • 1 tablespoon of cayenne pepper
  • 1 tablespoon of palm oil
  • Salt to taste
  • 1 lemon, zested

Method

  1. In a pan, heat the palm oil and sauté the garlic and onions.
  2. Add the dried fish and cook for 5-7 minutes until it is golden brown.
  3. Add the plantain slices and cook for another 3-4 minutes until the plantains are soft.
  4. Add the Guinea pepper, cayenne pepper, and salt, stirring well.
  5. Finally, zest the lemon and mix it into the dish.
  6. Serve hot.
