Dirty Pot Roast with Liver and Onions
A classic Sunday evening dish, the dirty pot roast with liver and onions is crispy and delicious.

Ingredients
- 400g of pig liver
- 4 potatoes
- 2 onions
- 250g of bacon
- 200ml of beef broth
- 30g of butter
- salt and pepper
- 2 rosemary leaves
- 2 thyme leaves
- 1 tablespoon of white wine vinegar
Method
- Cut the liver into small pieces and place it in a bowl. Season with salt and pepper, and mix well.
- Slice the onions and add them to a large pan with butter. Cook over medium heat until the onions are golden.
- Add the liver to the onions and cook for 5 minutes, stirring frequently.
- Cut the potatoes into cubes and add them to the pan with the liver. Add the beef broth, rosemary, thyme, and white wine vinegar.
- Bring to a boil, cover, and simmer over medium-low heat for 45-60 minutes, or until the potatoes are cooked.
- Cook the bacon in a separate pan over high heat for 5-7 minutes, or until it is crispy and golden.
- Serve the potatoes and liver with the bacon on top, garnished with the onions.
- On the side, serve a bit of broth for extra flavor.
