- 2 crocodile tails
- 200 g of red bell peppers
- 100 g of onions
- 200 g of bacon
- 200 ml of red wine
- 50 g of rosemary
- 50 g of parsley
- 200 ml of beef broth
- Salt and pepper to taste
- Extra virgin olive oil
Method
- Rinse the crocodile tail thoroughly and cut it into 5 cm pieces.
- Prepare the sauce by sautéing the bacon, onions, and red bell peppers in a pan with olive oil for 5-7 minutes.
- Add the rosemary, parsley, red wine, and beef broth, bringing everything to a boil.
- Add the crocodile tail pieces to the sauce and cook over medium heat for 30-40 minutes, adding broth occasionally to keep the tail moist.
- Season with salt and pepper to taste.
- Serve hot, drizzled with a bit of olive oil and garnished with chopped parsley.
