A traditional Chilean meal, prepared in a large ground oven and served with a variety of dishes.

Ingredients
- 2 kg of beef and pork
- 2 kg of fish and shellfish
- 1 kg of potatoes
- 500 g of sweet potatoes
- 200 g of red cabbage
- 200 g of onions
- 200 g of polenta
- 2 liters of assorted vegetables
- 1 liter of tomato sauce
- 1 liter of water
- 200 g of bread
- 100 g of zucchini
Method
- Prepare the ingredients: cut the beef, pork, fish, and shellfish into large pieces.
- In a large pot, mix the meat, fish, and shellfish with water and tomato sauce, bringing to a boil.
- In another container, prepare the polenta with warm water.
- Remove the ground from the center of a large ground oven and place the polenta in the center.
- Arrange the various ingredients around the polenta: vegetables, onions, fish, shellfish, meat.
- Cover with the remaining ground and cook slowly for 3-4 hours.
- Serve hot, accompanied by bread and vegetables.
The story
Curanto originates from the island of Chiloé, in southern Chile, and has long been a staple meal for families during holidays and special occasions.
