Ingredients

  • 2 kg of beef and pork
  • 2 kg of fish and shellfish
  • 1 kg of potatoes
  • 500 g of sweet potatoes
  • 200 g of red cabbage
  • 200 g of onions
  • 200 g of polenta
  • 2 liters of assorted vegetables
  • 1 liter of tomato sauce
  • 1 liter of water
  • 200 g of bread
  • 100 g of zucchini

Method

  1. Prepare the ingredients: cut the beef, pork, fish, and shellfish into large pieces.
  2. In a large pot, mix the meat, fish, and shellfish with water and tomato sauce, bringing to a boil.
  3. In another container, prepare the polenta with warm water.
  4. Remove the ground from the center of a large ground oven and place the polenta in the center.
  5. Arrange the various ingredients around the polenta: vegetables, onions, fish, shellfish, meat.
  6. Cover with the remaining ground and cook slowly for 3-4 hours.
  7. Serve hot, accompanied by bread and vegetables.

The story

Curanto originates from the island of Chiloé, in southern Chile, and has long been a staple meal for families during holidays and special occasions.
