These soft, sweet biscuits infused with rum and tea are the perfect afternoon tea treat in Cumbria.

Ingredients
- 250 g of flour
- 100 g of sugar
- 100 g of butter
- 2 eggs
- 1 tea bag
- 60 ml of rum
- 1 packet of yeast
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of salt
Method
- Mix the flour, salt, and yeast in a large bowl.
- In another bowl, mix the butter, sugar, eggs, brewed tea, and rum.
- Combine the butter mixture with the flour components until you get a homogeneous dough.
- Add the vanilla extract and mix well.
- Shape the dough into a bar and bake it in the oven at 180°C for 25-30 minutes.
- Let the bar cool down, then cut it into pieces about 1 cm thick.
- Re-bake the pieces in the oven at 160°C for 15-20 minutes until they turn golden.
- Let the biscuits cool before serving them with a cup of tea.
