A creamy and robust Scottish soup made with fish and potatoes.

Ingredients
- 300 g of salmon fillet
- 400 g of potatoes
- 2 onions
- 1 zucchini
- 2 tablespoons of butter
- 2 tablespoons of flour
- 500 ml of fish broth
- 1 tablespoon of cream
- salt and pepper to taste
- 1 tablespoon of chopped parsley
- 200 ml of milk
Method
- Cut the fish into small pieces and fry it in a pan with butter until golden.
- Dice the potatoes, onion, and zucchini and add them to the pan with the fish.
- Add the flour and stir well to form a roux.
- In another pan, bring the fish broth to a boil and add the roux made with fish and vegetables.
- Cook the mixture for about 20 minutes until the potatoes are soft.
- Blend everything in a bowl and add the milk and cream. Mix well and let it warm up.
- It's ready to serve with a sprinkle of chopped parsley on top.
- Serving suggestion: Serve with a slice of fresh bread.
The story
Cullen Skink is a traditional Scottish soup from the north of Scotland, dating back to the 1930s and named after the town of Cullen, where it was famously served in a local bar.
