A classic Greek appetizer, Cretan fava is a creamy and light dish, ideally served in the spring.

Ingredients

  • 200 g of split yellow peas
  • 300 ml of water
  • 1 onion
  • 2 dried dates
  • 1 lemon
  • 1 tablespoon of extra virgin olive oil
  • salt to taste
  • 1 tablespoon of sugar

Method

  1. Rinse the split yellow peas and soak them in cold water for 30 minutes.
  2. In a pot, bring water to a boil with the peas, cover, and cook on low heat for 30 minutes.
  3. Clean the onion and cut it into cubes.
  4. In a bowl, mix the onion, dates, lemon juice, olive oil, and sugar.
  5. Add the cooked peas and mix well.
  6. Let the fava cool and refrigerate for at least 2 hours before serving.
  7. Serve chilled, garnished with a slice of lemon and a date.

The story

Cretan fava is an ancient tradition dating back to the Minoan period, when farmers used leftover wheat to create this recipe.
