Cretan Fava
A classic Greek appetizer, Cretan fava is a creamy and light dish, ideally served in the spring.

Ingredients
- 200 g of split yellow peas
- 300 ml of water
- 1 onion
- 2 dried dates
- 1 lemon
- 1 tablespoon of extra virgin olive oil
- salt to taste
- 1 tablespoon of sugar
Method
- Rinse the split yellow peas and soak them in cold water for 30 minutes.
- In a pot, bring water to a boil with the peas, cover, and cook on low heat for 30 minutes.
- Clean the onion and cut it into cubes.
- In a bowl, mix the onion, dates, lemon juice, olive oil, and sugar.
- Add the cooked peas and mix well.
- Let the fava cool and refrigerate for at least 2 hours before serving.
- Serve chilled, garnished with a slice of lemon and a date.

Cretan fava is an ancient tradition dating back to the Minoan period, when farmers used leftover wheat to create this recipe.
