Ingredients

  • 400 ml of fresh cream
  • 8 whole eggs
  • 150 g of granulated sugar
  • 30 g of sugar for caramelizing

Method

  1. Prepare the custard by whisking together cream, eggs, and sugar until well combined.
  2. Pour the mixture into small serving ramekins and bake in a water bath at 325°F (160°C) for about 45 minutes or until just set.
  3. Allow to cool completely before chilling in the refrigerator for at least 3 hours.
  4. Just before serving, sprinkle the top with sugar and caramelize it using a kitchen torch or under the broiler until golden brown.

The origins of Crème Brûlée are uncertain, but it is popular throughout France including the region of Bordeaux. Its recipe relies on a custard base made with cream and eggs topped with caramelized sugar.
