Ingredients

  • 200 g of chicken cutlets
  • 1 onion
  • 100 g of butter
  • 2 eggs
  • 200 g of flour
  • 50 g of sugar
  • 1 packet of baking powder
  • 100 g of onion
  • Oil for frying
  • Salt and pepper to taste

Method

  1. Mix the chicken meat with a pinch of salt and pepper, then add the eggs, oil, chopped garlic, and mix well.
  2. In another bowl, mix the flour, melted butter, sugar, and baking powder.
  3. Combine the mixture from step 1 with the flour mixture until you get a homogeneous dough.
  4. Shape small balls of dough the size of a nut, coat them in flour, and fry in hot oil.
  5. Cover the balls with the chicken mixture and wrap them in puff pastry, forming a shell shape.
  6. Fry the coxinhas until golden in hot oil and serve hot with a sprinkle of salt.

The story

Coxinha originated in São Paulo in the 1940s as a creative way to use leftover chicken parts and create a popular and sellable dish.
