Tunisian couscous is a rich, fragrant dish perfect for a warm and welcoming meal.

Ingredients
- 1 kg of couscous
- 3 liters of water
- 1 teaspoon of saffron
- 2 onions
- 2 carrots
- 2 zucchini
- 1 onion
- 1 pepper
- 1 teaspoon of black pepper
- 1 teaspoon of salt
- Olive oil
Method
- Rinse the couscous in plenty of cold water, shaking the pot to ensure it is not dusty.
- Bring 3 liters of water to a boil in a large pot, add the saffron cone and let it infuse for 10-15 minutes.
- In another pot, sauté the onions, carrots, zucchini, and garlic in a bit of olive oil.
- Add the pepper and cook for 5 minutes, then add the couscous and stir well.
- Place the pot with the couscous in the pot with the water and saffron, cover and cook over low heat for 10-15 minutes.
- Let the couscous rest for 10 minutes, then stir and serve it hot with pepper and salt.
