Ingredients

  • 1 kg of couscous
  • 3 liters of water
  • 1 teaspoon of saffron
  • 2 onions
  • 2 carrots
  • 2 zucchini
  • 1 onion
  • 1 pepper
  • 1 teaspoon of black pepper
  • 1 teaspoon of salt
  • Olive oil

Method

  1. Rinse the couscous in plenty of cold water, shaking the pot to ensure it is not dusty.
  2. Bring 3 liters of water to a boil in a large pot, add the saffron cone and let it infuse for 10-15 minutes.
  3. In another pot, sauté the onions, carrots, zucchini, and garlic in a bit of olive oil.
  4. Add the pepper and cook for 5 minutes, then add the couscous and stir well.
  5. Place the pot with the couscous in the pot with the water and saffron, cover and cook over low heat for 10-15 minutes.
  6. Let the couscous rest for 10 minutes, then stir and serve it hot with pepper and salt.
