A traditional Irish dish, coddle is a delicious preparation of vegetables and meat cooked in a skillet.

Ingredients
- 400g of potatoes
- 200g of onions
- 200g of carrots
- 100g of prawns
- 200g of bacon
- 2 liters of beef broth
- 1 onion
- 1 red bell pepper
- 1 green bell pepper
- 100g of lentils
- 2 garlic cloves
- Salt and pepper to taste
Method
- Peel and cut the potatoes into cubes, slice the carrots, and slice the onions.
- In a large skillet, sauté the bacon with the onions and garlic.
- Add the carrots and potatoes, sauté for a few minutes.
- Add the beef broth, lentils, and peppers, cover, and cook on medium heat for about 30 minutes.
- Add the prawns and cook for another 5-10 minutes, until the prawns are cooked.
- Arrange the coddle in a serving dish, season with salt and pepper to taste.
- Serve hot with a slice of toasted bread.
