Ingredients
- 200 g of finely ground beef
- 1 onion
- 1 tablespoon of saffron
- 1 tablespoon of olive oil
- 1 tablespoon of apple cider vinegar
- Salt and pepper to taste
- 200 g of sweet potatoes
- 1 tablespoon of fresh mint
- 1 tablespoon of fresh cherry leaves
- 1 tablespoon of fresh parsley
- Cold water for serving
Method
- Peel and finely chop the onion.
- In a bowl, mix the ground beef, onion, saffron, olive oil, apple cider vinegar, salt, and pepper.
- Cut the sweet potatoes into small pieces and cook in salted water for about 10 minutes, then let them cool down.
- While the sweet potatoes are cooling, finely chop the mint, cherry leaves, and parsley.
- Add the mint, cherry leaves, and parsley to the meat mixture and mix well.
- Shape the çiğ köfte with the meat mixture and quickly dip them in cold water to make them crispy.
- Serve immediately, briefly dipping them in cold water before serving.
The story
Çiğ Köfte is an ancient dish from Diyarbakır, a city in Şanlıurfa region, with a history dating back to the Byzantine period. For a long time, it was considered a luxury dish, consumed only on special occasions.
