Ingredients
- 250g of flour
- 150g of ground beef
- 150g of spinach
- 100g of potatoes
- 50g of onion
- 2 eggs
- 100g of butter
- salt and pepper to taste
- oil for frying
Method
- In a bowl, mix the flour with melted butter and eggs, adding salt and pepper to form a dough.
- Boil the potatoes and spinach, then mix the ground beef with chopped onion.
- Mince the potatoes and spinach, then mix them with the meat mixture.
- Form the empanadillas with the dough, filling them with the meat and vegetable mixture.
- Fry the empanadillas in a bowl of hot oil until golden brown.
- Serve hot with a sprinkle of salt and pepper.
The story
Chuquisque empanadas were introduced to Popayán by Spanish colonists, who blended them with local traditions to create this unique version.
