Ingredients

  • 500 g of chicken, cut into pieces
  • 1 onion
  • 2 green onions
  • 1 chili pepper
  • 1 tablespoon of sugar
  • 1 tablespoon of soy sauce
  • 1 tablespoon of tomato sauce
  • 1/2 teaspoon of ground pepper
  • 1/2 teaspoon of soy vinegar
  • 2 tablespoons of soybean oil
  • 1/2 teaspoon of almond vinegar
  • salt to taste
  • 1 cup of chopped vegetables (napa cabbage, onion, carrot)

Method

  1. Cut the chicken into pieces and set aside.
  2. Sauté the soybean oil in a pan, then add the onion and chopped vegetables and cook for 5-7 minutes.
  3. Add the chicken, chili pepper, sugar, soy sauce, tomato sauce, ground pepper, soy vinegar, and almond vinegar. Stir well.
  4. Cook over medium heat for 10-15 minutes, adding a bit of water if the sauce becomes too thick.
  5. Serving: serve the dakgalbi hot with chopped vegetables and condiments.

Chuncheon's dalgalbi is famous for its unique sauce, which blends the traditional taste of Chuncheon with a touch of originality. The dish is said to have originated as a creative way to use leftover chicken.
