Chuncheon Dakgalbi

A dish of finely sliced chicken, marinated and cooked in a spicy sauce, served with vegetables and condiments.

Ingredients
- 500 g of chicken, cut into pieces
- 1 onion
- 2 green onions
- 1 chili pepper
- 1 tablespoon of sugar
- 1 tablespoon of soy sauce
- 1 tablespoon of tomato sauce
- 1/2 teaspoon of ground pepper
- 1/2 teaspoon of soy vinegar
- 2 tablespoons of soybean oil
- 1/2 teaspoon of almond vinegar
- salt to taste
- 1 cup of chopped vegetables (napa cabbage, onion, carrot)
Method
- Cut the chicken into pieces and set aside.
- Sauté the soybean oil in a pan, then add the onion and chopped vegetables and cook for 5-7 minutes.
- Add the chicken, chili pepper, sugar, soy sauce, tomato sauce, ground pepper, soy vinegar, and almond vinegar. Stir well.
- Cook over medium heat for 10-15 minutes, adding a bit of water if the sauce becomes too thick.
- Serving: serve the dakgalbi hot with chopped vegetables and condiments.
The story
Chuncheon's dalgalbi is famous for its unique sauce, which blends the traditional taste of Chuncheon with a touch of originality. The dish is said to have originated as a creative way to use leftover chicken.
