Chileno Stew

A calentado chileno is a hearty, warming stew that warms the heart, traditionally enjoyed in the Antofagasta region.

Ingredients
- 2 kg of beef
- 1 kg of potatoes
- 500 g of zucchini
- 200 g of onion
- 100 g of carrot
- 100 g of celery
- 2 cloves of garlic
- 2 liters of beef broth
- 1 liter of red wine
- 2 tablespoons of tomato sauce
- 1 teaspoon of red pepper
- salt and pepper to taste
Method
- Cut the meat into equal-sized pieces and boil it for 30 minutes in salted water.
- In a large pot, sauté the onion, garlic, carrot, and celery in a bit of oil.
- Add the boiled meat and broth, stir well.
- Add the sliced zucchini and red wine, bring to a boil.
- Cook over medium heat for about 1 hour, adding salt and pepper to taste.
- Finally, add the tomato sauce and red pepper, stir and let cook for another 15 minutes.
- Serve calentado chileno with sliced potatoes in a warm dish.
The story
Calentado chileno is a traditional dish found mainly in the Antofagasta region, where miners would prepare it to warm up after a long shift.
