Ingredients

  • 2 kg of beef
  • 1 kg of potatoes
  • 500 g of zucchini
  • 200 g of onion
  • 100 g of carrot
  • 100 g of celery
  • 2 cloves of garlic
  • 2 liters of beef broth
  • 1 liter of red wine
  • 2 tablespoons of tomato sauce
  • 1 teaspoon of red pepper
  • salt and pepper to taste

Method

  1. Cut the meat into equal-sized pieces and boil it for 30 minutes in salted water.
  2. In a large pot, sauté the onion, garlic, carrot, and celery in a bit of oil.
  3. Add the boiled meat and broth, stir well.
  4. Add the sliced zucchini and red wine, bring to a boil.
  5. Cook over medium heat for about 1 hour, adding salt and pepper to taste.
  6. Finally, add the tomato sauce and red pepper, stir and let cook for another 15 minutes.
  7. Serve calentado chileno with sliced potatoes in a warm dish.

The story

Calentado chileno is a traditional dish found mainly in the Antofagasta region, where miners would prepare it to warm up after a long shift.
