Chicken with Bread Dumplings
A classic Austrian dish, Hendl mit Semmelknödel is a warm and delicious meal, perfect for a cold winter.

Ingredients
- 4 bread dumplings (about 7 oz each)
- 1 kg chicken
- 2 onions
- 3 carrots
- 2 garlic cloves
- 200g potatoes
- 100ml chicken broth
- 100ml white wine
- 1 teaspoon black pepper
- 1 teaspoon salt
- 100g butter
- 2 tablespoons chopped parsley
Method
- Prepare the bread dumplings: cut the bread cubes, add a bit of butter, salt, and black pepper, mix well, and let them dry.
- Cut the chicken into pieces and put them in a casserole with butter, onions, carrots, and garlic, cook over medium heat until the onions and carrots are soft.
- Add the cubed potatoes, chicken broth, white wine, salt, and black pepper, cover and cook over medium heat until the potatoes are cooked.
- Add the bread dumplings to the casserole, cover and cook over low heat for 15-20 minutes.
- Place the bread dumplings on top of the chicken and vegetables, cover and cook for another 10-15 minutes.
- Occasionally stir and check the cooking, adding broth if necessary.
- Serve hot, garnished with chopped parsley.
- Alternatively, the bread dumplings can be prepared separately and served with the chicken in a casserole.
