A classic Austrian dish, Hendl mit Semmelknödel is a warm and delicious meal, perfect for a cold winter.

Ingredients

  • 4 bread dumplings (about 7 oz each)
  • 1 kg chicken
  • 2 onions
  • 3 carrots
  • 2 garlic cloves
  • 200g potatoes
  • 100ml chicken broth
  • 100ml white wine
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 100g butter
  • 2 tablespoons chopped parsley

Method

  1. Prepare the bread dumplings: cut the bread cubes, add a bit of butter, salt, and black pepper, mix well, and let them dry.
  2. Cut the chicken into pieces and put them in a casserole with butter, onions, carrots, and garlic, cook over medium heat until the onions and carrots are soft.
  3. Add the cubed potatoes, chicken broth, white wine, salt, and black pepper, cover and cook over medium heat until the potatoes are cooked.
  4. Add the bread dumplings to the casserole, cover and cook over low heat for 15-20 minutes.
  5. Place the bread dumplings on top of the chicken and vegetables, cover and cook for another 10-15 minutes.
  6. Occasionally stir and check the cooking, adding broth if necessary.
  7. Serve hot, garnished with chopped parsley.
  8. Alternatively, the bread dumplings can be prepared separately and served with the chicken in a casserole.
