Chicken Paprika Stew
A traditional Hungarian dish, chicken paprika stew is a hearty soup of chicken, red peppers, spices, and vegetables.

Ingredients
- 500 g of chicken, cut into pieces
- 4 red peppers, sliced
- 2 onions, chopped
- 1 zucchini, diced
- 1 carrot, diced
- 1 tablespoon of paprika powder
- 1 tablespoon of sugar
- 1 liter of chicken broth
- 2 tablespoons of olive oil
- salt and pepper to taste
- 1 teaspoon of tomato water
- 1 bay leaf
Method
- In a large pot, heat some olive oil and sauté the onions until they turn golden.
- Add the chicken and cook for a few minutes until it is well done.
- Add the peppers, zucchini, carrot, paprika powder, salt, and pepper, stirring well.
- Pour in the chicken broth and add the bay leaf. Cook over medium heat for about 30 minutes, until the chicken is fully cooked and the stew is thick and aromatic.
- Add the sugar and tomato water, stirring well. Serve with paprika powder on the side for extra flavor.
The story
Chicken paprika stew is one of the oldest Hungarian dishes, with roots dating back to the 17th century. Originally made with pork, it has evolved into a classic chicken-based stew.
