Chermoula
A aromatic and spicy sauce for fish or vegetables, typical of Tunisian cuisine.

Ingredients
- 100 g of red onion
- 2 leeks
- 1 chili pepper
- 2 garlic cloves
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon sugar
- 2 tablespoons vinegar
- 2 tablespoons olive oil
- 1 tablespoon coriander seeds
- 1 tablespoon fennel seeds
- 1 tablespoon fennel seeds
Method
- Wash and chop the red onion, leeks, chili pepper, and garlic.
- In a pot, mix the olive oil, vinegar, salt, pepper, and sugar.
- Add the fennel seeds and coriander seeds and bring to a boil.
- Simmer the onion mixture with the condiments for 10 minutes over medium heat.
- Let it cool and serve with fish or vegetables.
The story
Chermoula is a traditional Tunisian sauce with its roots in the ancient maritime cuisines of North Africa, where sailors used herbs and spices to preserve fish.
