Ingredients

  • 100 g of red onion
  • 2 leeks
  • 1 chili pepper
  • 2 garlic cloves
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon sugar
  • 2 tablespoons vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon coriander seeds
  • 1 tablespoon fennel seeds
  • 1 tablespoon fennel seeds

Method

  1. Wash and chop the red onion, leeks, chili pepper, and garlic.
  2. In a pot, mix the olive oil, vinegar, salt, pepper, and sugar.
  3. Add the fennel seeds and coriander seeds and bring to a boil.
  4. Simmer the onion mixture with the condiments for 10 minutes over medium heat.
  5. Let it cool and serve with fish or vegetables.

The story

Chermoula is a traditional Tunisian sauce with its roots in the ancient maritime cuisines of North Africa, where sailors used herbs and spices to preserve fish.
