Charquicán
A hearty and substantial dish, Charquicán is perfect for a cold day.

Ingredients
- 200 g of wild boar meat minced
- 100 g of chicken minced
- 200 g of lentils
- 2 onions
- 2 carrots
- 2 cucumbers
- 1 liter of meat broth
- 100 g of beans
- 100 g of potatoes
- 1 lemon
- salt and pepper to taste
- extra virgin olive oil
Method
- In a large pan, heat the oil and sauté the finely chopped onions, carrots, and cucumbers.
- Add the minced wild boar meat and chicken, cook until the meat is well done.
- Add the lentils, beans, cubed potatoes, and meat broth, bring to a boil.
- Simmer over medium-high heat for 20-25 minutes, adding water if necessary to maintain cooking.
- Season with salt and pepper, then add lemon juice.
- Boil for another 5-10 minutes until the vegetables are cooked and the sauce is sufficiently thick.
- Serve hot, accompanied by bread or fried potatoes.
The story
Originating from Mapuche culture, Charquicán was traditionally prepared with local ingredients and wild boar meat. Today, it is a traditional dish enjoyed throughout Chile's central and southern regions.
