Chakhoolé (Fish Stew)

A rich and aromatic stew from Saint-Louis, made with fish, tomatoes, and spices.

Ingredients
- 400 g of fish in pieces
- 200 g of tomatoes
- 2 onions
- 2 garlic cloves
- 2 tablespoons of palm oil
- 1 tablespoon of Guinea pepper
- 1 tablespoon of coriander
- 1 tablespoon of fresh ginger
- 1 tablespoon of black pepper
- 1 liter of fish broth
- salt to taste
- 1 tablespoon of sugar
Method
- In a pan, sauté the garlic and onions in palm oil.
- Add the fish and cook for 5-7 minutes.
- Add the cubed tomatoes, Guinea pepper, coriander, ginger, and black pepper.
- Add the fish broth and sugar, bringing to a boil.
- Simmer on low heat for 20-25 minutes, stirring occasionally.
- Top the fish and tomatoes with a layer of fish puree.
- Serve hot with the fish puree on top of the fish and tomatoes.
- Tasty and served!
