Ingredients

  • 400 g of fish in pieces
  • 200 g of tomatoes
  • 2 onions
  • 2 garlic cloves
  • 2 tablespoons of palm oil
  • 1 tablespoon of Guinea pepper
  • 1 tablespoon of coriander
  • 1 tablespoon of fresh ginger
  • 1 tablespoon of black pepper
  • 1 liter of fish broth
  • salt to taste
  • 1 tablespoon of sugar

Method

  1. In a pan, sauté the garlic and onions in palm oil.
  2. Add the fish and cook for 5-7 minutes.
  3. Add the cubed tomatoes, Guinea pepper, coriander, ginger, and black pepper.
  4. Add the fish broth and sugar, bringing to a boil.
  5. Simmer on low heat for 20-25 minutes, stirring occasionally.
  6. Top the fish and tomatoes with a layer of fish puree.
  7. Serve hot with the fish puree on top of the fish and tomatoes.
  8. Tasty and served!
