Ingredients

  • 200g of barley
  • 1 onion
  • 2 carrots
  • 2 cabbages
  • 1 zucchini
  • 1 liter of beef broth
  • 100g of lentils
  • 1 chili pepper
  • 2 garlic cloves
  • 1 tablespoon of extra virgin olive oil
  • Salt and pepper to taste
  • 1 tablespoon of balsamic vinegar

Method

  1. In a pot, heat the oil and sauté the garlic, onion, and garlic until golden brown.
  2. Add the carrots, cabbage, and zucchini, sauté for about 5 minutes.
  3. Add the beef broth and bring to a boil.
  4. Add the barley, lentils, and chili pepper, cook for 20-25 minutes or until the barley is soft.
  5. Serve the soup in bowls, drizzle with a tablespoon of balsamic vinegar and season with salt and pepper to taste, and serve hot.
