Cervia Soup

A traditional Viana do Castelo soup, sweet and savory, made with barley, vegetables, and spices.

Ingredients
- 200g of barley
- 1 onion
- 2 carrots
- 2 cabbages
- 1 zucchini
- 1 liter of beef broth
- 100g of lentils
- 1 chili pepper
- 2 garlic cloves
- 1 tablespoon of extra virgin olive oil
- Salt and pepper to taste
- 1 tablespoon of balsamic vinegar
Method
- In a pot, heat the oil and sauté the garlic, onion, and garlic until golden brown.
- Add the carrots, cabbage, and zucchini, sauté for about 5 minutes.
- Add the beef broth and bring to a boil.
- Add the barley, lentils, and chili pepper, cook for 20-25 minutes or until the barley is soft.
- Serve the soup in bowls, drizzle with a tablespoon of balsamic vinegar and season with salt and pepper to taste, and serve hot.
