Cavatelli with Sardines

A traditional dish from Reggio Calabria, this is a delightful blend of the strong taste of sardines and the delicious texture of cavatelli.

Ingredients
- 250g of cavatelli
- 200g of sardines in oil
- 1 onion
- 2 garlic cloves
- 50g of parsley
- 100ml of extra virgin olive oil
- 100ml of white wine
- salt and pepper to taste
- 100g of grated pecorino cheese
Method
- In a pan, heat the oil and sauté the garlic and onion until they turn golden brown.
- Add the sardines in oil and let them cook for a few minutes until the oil has mostly evaporated.
- Pour in the white wine and let it reduce for a few minutes.
- Add the cavatelli and cook for 5-7 minutes, stirring frequently.
- Occasionally add a bit of water to prevent the pasta from sticking.
- While the cavatelli are cooking, chop the parsley.
- Add the parsley and grated pecorino to the final dish.
- Mix well and serve immediately.
