Cartagena Fish Ceviche

Ingredients
- 500 g of sea fish (e.g., salmon, tuna, mahi-mahi)
- 100 g of ripe tomatoes
- 1 onion
- 2 lemons
- 1 teaspoon of black pepper
- 1 teaspoon of salt
- 1 tablespoon of extra virgin olive oil
- 1 red onion
- 1 tablespoon of coriander
- 1 tablespoon of fried onion
- 1 pimiento de piquillo (optional)
Method
- Cut the fish into equal-sized pieces and place them in a bowl.
- Chop the onion and mix it with black pepper and salt.
- Dice the tomatoes and add half of them to the bowl with the fish.
- Squeeze the lemons and pour the juice over the fish and tomatoes.
- Let it sit for 20-30 minutes to cook the fish.
- While the fish is cooking, dice the red onion and pimiento de piquillo.
- Mix the oil, red onion, and coriander together.
- Add the fish, tomatoes, and seasoned ingredients to the bowl and mix well.
- Serve immediately topped with the fried onion.
The story
Cartagena's ceviche has roots in pre-Columbian culinary art but gained popularity through Spanish and Arab influences. Today, it is a typical regional dish celebrated for its freshness and originality.
