  • 1 kg of caribou meat
  • 2 onions
  • 2 carrots
  • 2 zucchinis
  • 1 liter of beef broth
  • 1 red pepper
  • 1 shallot
  • 2 allspice berries
  • 1 mint leaf
  • salt and pepper to taste
  • 1 tablespoon of canola oil

Method

  1. In a large pot, heat the canola oil and sauté the onions and carrots until they are translucent.
  2. Add the caribou meat and cook until well done.
  3. Add the peppers, zucchini, and yellow squash, and cook for another 5 minutes.
  4. Pour in the beef broth, add the spices, allspice berries, and mint leaf, and let it simmer for 30-40 minutes.
  5. Serve the stew in portions, hot, with a sprinkle of salt and pepper to taste.
