Ingredients

  • 500 g of pork belly
  • 2 onions
  • 200 ml of beer
  • 2 garlic cloves
  • 100 ml of olive oil
  • 200 ml of beef broth
  • salt and pepper to taste
  • 100 g of zucchini
  • 100 g of carrots
  • 100 g of peas
  • 100 g of potatoes

Method

  1. Cut the pork belly into pieces and season with salt.
  2. In a large pan, heat the olive oil and brown the pork pieces over medium-high heat.
  3. Add the sliced onions and garlic, and cook until the onions become golden.
  4. Pour in the beer and beef broth, bringing it to a boil.
  5. Reduce the heat, cover, and simmer for about 1 hour or until the pork is tender.
  6. Add the cubed zucchini, carrots, peas, and potatoes, and cook until they are cooked through.
  7. Season with salt and pepper to taste, then serve the Carbonade Liégeoise hot.
