Caponcino

Caponcino is a traditional Sicilian dish made with young chicken and spices, typically served in spring.

Ingredients
- 2 young chickens
- 200 g of cooked ham
- 100 g of prosciutto crudo
- 100 g of pancetta
- 2 onions
- 1 zucchini
- 1 bell pepper
- 100 ml of olive oil
- 200 ml of chicken broth
- salt and pepper to taste
- 2 garlic cloves
- 200 g of pecorino cheese, grated
Method
- Prepare the young chicken, cut it into pieces and season it with salt.
- In a pan, sauté the garlic and onions in olive oil.
- Add the cooked ham, prosciutto crudo, and pancetta, sauté for a few minutes.
- Add the chicken pieces and chicken broth, cover and cook on low heat for about 1 hour.
- Add the chopped vegetables, cook for another 20 minutes.
- Arrange the chicken pieces on a plate, cover with grated cheese.
- Preheat the oven and bake the caponcino in the oven at 180°C for 10-15 minutes before serving.
The story
Caponcino is a traditional Palermo dish that originated to utilize young chickens that were not yet mature for other meals. Traditionally, it was prepared during spring when the chicken was more tender.
