Caldo Verde
A traditional dish from Minho, Caldo Verde is a green soup made with potatoes, kale, and bacon.

Ingredients
- 200g of kale
- 500g of potatoes
- 200g of bacon
- 200ml of olive oil
- 2 onions
- 100g of beans
- Salt and pepper to taste
- 500ml of meat broth
- 1 lemon
Method
- Wash the kale and cut it into small pieces.
- Dice the potatoes and onions.
- In a pot, heat the olive oil and fry the bacon until it becomes golden.
- Add the onions and potatoes, and sauté for 5 minutes.
- Add the meat broth, beans, and kale. Bring to a boil and cook for 20 minutes.
- Reduce the broth and season with salt and pepper to taste.
- Serve hot with a drop of lemon.
- Enjoy!
The story
Caldo Verde is a traditional dish from northern Portugal, particularly popular in the district of Minho, where it is said to have been invented in the 19th century.
