Cachopo, a traditional Spanish dish, is a delightful breaded and fried pork cutlet stuffed with cheese and ham, crispy on the outside and tender on the inside.

Ingredients
- 4 pork chops
- 300 grams of shredded cheese
- 150 grams of raw ham, shredded
- 2 eggs
- 300 grams of toasted bread
- 100 ml of milk
- Salt and pepper
- Oil for frying
Method
- Cut the pork chops in half lengthwise without cutting all the way through.
- Fill them with half the cheese and ham, then close with a piece of kitchen twine.
- In a bowl, beat the eggs with milk, salt, and pepper.
- In another bowl, crush the toasted bread.
- Dip the cachopos in the egg mixture, then coat in the crushed bread, making sure to cover well.
- Fry in hot oil until golden and crispy.
- Serve hot with a salt shaker on the side.
The story
Originating from the Navarra region, the cachopo likely emerged during the Renaissance as a richer and more elaborate version of the classic cutlet.
