Cabbage Tagine with Lentils

A delicious Marrakesh-style tagine made with cabbage, lentils, and cucumber, slowly cooked with authentic Moroccan spices.

Ingredients
- 2 onions
- 500 g of lentils
- 1 cucumber
- 1 onion
- 200 g of zucchini
- 100 ml of olive oil
- 2 garlic cloves
- 200 ml of vegetable broth
- Salt and pepper to taste
- 1 teaspoon of cinnamon powder
- 1 teaspoon of cumin powder
- 1 teaspoon of ginger powder
Method
- In a bowl, cook the lentils in boiling water for 5 minutes, then drain and set aside.
- In a non-stick pan, sauté the garlic in olive oil over medium heat.
- Add the finely chopped onions and garlic, sauté for 5 minutes.
- Add the cucumber, zucchini, and chopped onion, sauté for another 5 minutes.
- Add the lentils, broth, cinnamon, cumin, and ginger, stir well.
- Cover and cook on low heat for 20 minutes.
- Turn off the heat and serve the tagine hot.
The story
The cabbage and lentil tagine is a culinary tradition from Marrakesh that dates back to the days of the great caravans, when traders used local ingredients to create nourishing and unique-flavored dishes.
