Brabantian Carbonade

A classic of Brabantian cuisine, carbonade brabançonne is a slow-cooked beef stew simmered in a flavorful, spiced sauce.

Ingredients
- 500g of beef in chunks
- 2 onions
- 2 carrots
- 2 cucumbers
- 2 liters of beef broth
- 200g of green beans
- 100g of bacon
- 2 tablespoons of black pepper
- 2 tablespoons of salt
- 2 tablespoons of thyme
- 2 tablespoons of rosemary
- 2 tablespoons of vinegar
Method
- In a large pot, mix the beef chunks with beef broth, vinegar, black pepper, salt, thyme, and rosemary. Bring to a boil and simmer for 2 hours.
- In another pot, sauté the bacon with onions, carrots, and cucumbers for 10 minutes.
- Add the green beans and cook for another 5 minutes.
- Combine the meat and its sauce with the sautéed vegetables and simmer for another hour on low heat.
- Serve hot, garnished with chopped parsley.
- Let it rest for at least 30 minutes before serving to allow the flavors to meld.
The story
Originating in the 17th century, carbonade brabançonne was a dish for the peasants of Brabant, who used old, less desirable cuts of beef to create this rich and nutritious stew.
