Ingredients

  • 1 kg of carrot, cut into pieces
  • 500 g of cabbage, cut into pieces
  • 1 zucchini, cut into pieces
  • 1 onion, cut into cubes
  • 2 carrots, cut into pieces
  • 250 g of tomatoes, cut into cubes
  • 1 liter of vegetable broth
  • 2 tablespoons of olive oil
  • 1 tablespoon of white wine vinegar
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 1 mint leaf for the final touch

Method

  1. In a large pot, heat the olive oil and sauté the onion cubes until golden.
  2. Add the carrots, zucchini, and onions, sauté for about 5 minutes.
  3. Add the vegetable broth, cabbage, tomatoes, and white wine vinegar.
  4. Bring to a boil and let cook for 30-40 minutes, stirring occasionally.
  5. Serve the borscht in a serving bowl, garnish with mint, and serve hot.
  6. Flavorful and colorful, the borscht is ready to be enjoyed.
