Borscht
A colorful and flavorful appetizer made with fresh vegetables and carrot soup.

Ingredients
- 1 kg of carrot, cut into pieces
- 500 g of cabbage, cut into pieces
- 1 zucchini, cut into pieces
- 1 onion, cut into cubes
- 2 carrots, cut into pieces
- 250 g of tomatoes, cut into cubes
- 1 liter of vegetable broth
- 2 tablespoons of olive oil
- 1 tablespoon of white wine vinegar
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 1 mint leaf for the final touch
Method
- In a large pot, heat the olive oil and sauté the onion cubes until golden.
- Add the carrots, zucchini, and onions, sauté for about 5 minutes.
- Add the vegetable broth, cabbage, tomatoes, and white wine vinegar.
- Bring to a boil and let cook for 30-40 minutes, stirring occasionally.
- Serve the borscht in a serving bowl, garnish with mint, and serve hot.
- Flavorful and colorful, the borscht is ready to be enjoyed.
