Ingredients

  • 1 kg of beef
  • 2 onions
  • 100 g of toasted bread
  • 50 g of butter
  • 2 eggs
  • Salt and pepper
  • 100 g of breadcrumbs
  • Oil for frying
  • Dijon mustard

Method

  1. Cut the beef into small cubes and set aside.
  2. Slice the onions thinly and fry them in a pan with butter until they turn golden.
  3. In a bowl, mix the beef, fried onions, eggs, salt, pepper, and breadcrumbs.
  4. Fry the mixture in small balls in hot oil until they become crispy.
  5. Serve the bitterballen with a generous dollop of Dijon mustard.
  6. Enjoy your meal!

The story

Bitterballen were originally created as leftovers from fried toast, using the leftover meat broth from stamppot preparation. They became popular in the 1950s, served in bars as a snack.
