Ingredients
- 200g bitter leaves
- 1 onion
- 200g chicken or fish
- 200g sweet potatoes
- 100g zucchini
- 2 spring onions
- 1 chili pepper
- 2 tablespoons palm oil
- 1 tablespoon pimento de granada
- Salt to taste
- Water for the soup
Method
- Wash the bitter leaves and cut them into small pieces.
- In a large pot, heat the palm oil and add the chopped onion and chili pepper.
- Add the chicken or fish cut into pieces and cook until well done.
- Add the cubed zucchini and sweet potatoes, and cook for about 10-15 minutes.
- Add the bitter leaves, pimento de granada, and salt, and let it cook for another 10-15 minutes.
- Pour in the water and let everything boil for about 20-25 minutes, adjusting the salt if needed.
- Finally, add the spring onions cut into small pieces and cook for another 5-7 minutes.
- Serve hot with bread or as a side dish with rice.
