Binignit is a traditional Filipino sweet from the Visayas and Mindanao regions, a delightful seafood and sugar soup.

Ingredients
- 200 g of coconut
- 300 g of seafood (shrimp, octopus, clams)
- 200 ml of water
- 300 g of sugar
- 100 ml of coconut milk
- 100 g of tapioca
- 100 g of jackfruit
- 100 g of caramelized banana
- 100 g of toasted coconut
- 100 g of stale bread
- 1 lemon
- 1/2 teaspoon of saffron
Method
- Prepare the seafood: clean and cook the shrimp, cut the octopus into pieces and cook the clams.
- In a pot, mix the water, sugar, coconut milk, and saffron over medium heat.
- Add the seafood and cook for 10 minutes.
- In another pot, cook the tapioca according to the manufacturer's instructions.
- Add the tapioca to the seafood soup and cook for another 5 minutes.
- Add the caramelized banana, toasted coconut, and stale bread.
- Serve the binignit in bowls and garnish with coconut and lemon.
- Serve hot.
