Ingredients

  • 2 kg of beef, cut into pieces
  • 1 kg of pork, cut into pieces
  • 500 g of carrots, cubed
  • 500 g of onions, sliced
  • 500 g of cabbage, chopped
  • 250 g of zucchini, sliced
  • 200 g of red peppers, sliced
  • 1 liter of red wine
  • 500 ml of beef broth
  • 200 g of bread, cut into cubes
  • 100 g of toasted almonds
  • Salt and pepper to taste

Method

  1. In a large pot, heat the oil and brown the beef and pork pieces over medium heat.
  2. Add the carrots and onions, cook for a few minutes.
  3. Add the cabbage, zucchini, and peppers, cook for another 10-15 minutes.
  4. Pour in the red wine and let it reduce for 5-7 minutes.
  5. Add the beef broth, bring to a boil and simmer over medium heat for 2-3 hours, adding water if necessary.
  6. In another pan, toast the almonds.
  7. Add the toasted bread and almonds to the meat broth, stir well.
  8. Serving: Serve the Bigos hot in portions, garnished with toasted almonds.

The story

Bigos szlachecki has its origins in Polish regions, where it was prepared by nobles as a luxurious dish. Today, it is a popular dish in Łódź and throughout Poland.
