Bigos szlachecki
A traditional Polish dish, Bigos szlachecki is a hearty meat and vegetable stew with a unique and flavorful taste.

Ingredients
- 2 kg of beef, cut into pieces
- 1 kg of pork, cut into pieces
- 500 g of carrots, cubed
- 500 g of onions, sliced
- 500 g of cabbage, chopped
- 250 g of zucchini, sliced
- 200 g of red peppers, sliced
- 1 liter of red wine
- 500 ml of beef broth
- 200 g of bread, cut into cubes
- 100 g of toasted almonds
- Salt and pepper to taste
Method
- In a large pot, heat the oil and brown the beef and pork pieces over medium heat.
- Add the carrots and onions, cook for a few minutes.
- Add the cabbage, zucchini, and peppers, cook for another 10-15 minutes.
- Pour in the red wine and let it reduce for 5-7 minutes.
- Add the beef broth, bring to a boil and simmer over medium heat for 2-3 hours, adding water if necessary.
- In another pan, toast the almonds.
- Add the toasted bread and almonds to the meat broth, stir well.
- Serving: Serve the Bigos hot in portions, garnished with toasted almonds.
The story
Bigos szlachecki has its origins in Polish regions, where it was prepared by nobles as a luxurious dish. Today, it is a popular dish in Łódź and throughout Poland.
