A traditional Bergamo dish, Bigolin is a delightful pasta frolla served with a vegetable and spice sauce.

Ingredients
- 1 kg of pasta frolla
- 200 g of mixed vegetables (potatoes, carrots, pumpkin)
- 2 onions
- 2 cloves of garlic
- 100 ml of olive oil
- 1 liter of beef broth
- 100 g of grated cheese
- salt and pepper to taste
- 1 tablespoon of chopped parsley
Method
- Preheat the oven to 180°C. Cut the vegetables and onions into large pieces.
- In a pan, sauté the onions and garlic in olive oil, then add the vegetables and cook over medium heat for about 20 minutes.
- In a pot, bring the beef broth to a boil, then add the fried vegetables and cook for another 10 minutes.
- While the vegetables are cooking, prepare the pasta frolla by cutting it into pieces about 2 cm thick.
- Dip the pasta pieces in the vegetable sauce and cook for 2-3 minutes until the pasta is soft.
- Serve the Bigolin with a sprinkle of grated cheese and chopped parsley.
