Ingredients

  • 500 g of flour
  • 200 g of sugar
  • 100 g of butter
  • 2 eggs
  • 100 g of almonds
  • 100 g of dark chocolate
  • 1 tablespoon of rum
  • 1 packet of baking yeast
  • 1 tablespoon of warm water
  • Pinches of cinnamon
  • A few cinnamon leaves
  • A little powdered sugar for decoration

Method

  1. In a bowl, mix the flour, sugar, melted butter, eggs, chopped almonds, dark chocolate, rum, cinnamon, and yeast mixed with warm water.
  2. Let the mixture rest for 30 minutes.
  3. Form a ball with the mixture and place it in a buttered baking dish.
  4. Cover with a cloth and let it rise in a warm place for 24 hours.
  5. Preheat the oven to 180°C and bake the Bibermolen for 1 hour.
  6. Let it cool down and decorate with powdered sugar and cinnamon leaves.
  7. Serve it warm or at room temperature.

The story

Bibermolen is a traditional sweet from Bruges, a city renowned for its rich culinary heritage. Legend has it that it was invented during Saint Joseph's feast, when local monks decided to prepare a special sweet treat.
