A traditional sweet from Bruges, Bibermolen, which resembles a panettone with a slightly alcoholic taste.

Ingredients
- 500 g of flour
- 200 g of sugar
- 100 g of butter
- 2 eggs
- 100 g of almonds
- 100 g of dark chocolate
- 1 tablespoon of rum
- 1 packet of baking yeast
- 1 tablespoon of warm water
- Pinches of cinnamon
- A few cinnamon leaves
- A little powdered sugar for decoration
Method
- In a bowl, mix the flour, sugar, melted butter, eggs, chopped almonds, dark chocolate, rum, cinnamon, and yeast mixed with warm water.
- Let the mixture rest for 30 minutes.
- Form a ball with the mixture and place it in a buttered baking dish.
- Cover with a cloth and let it rise in a warm place for 24 hours.
- Preheat the oven to 180°C and bake the Bibermolen for 1 hour.
- Let it cool down and decorate with powdered sugar and cinnamon leaves.
- Serve it warm or at room temperature.
The story
Bibermolen is a traditional sweet from Bruges, a city renowned for its rich culinary heritage. Legend has it that it was invented during Saint Joseph's feast, when local monks decided to prepare a special sweet treat.
