Betawi Chicken Opor

A classic of Indonesian cuisine, Opor Ayam Betawi is a chicken dish cooked in a rich and aromatic sauce with onions, ginger, and cardamom.

Ingredients
- 4 small chickens, cut into pieces
- 3 liters of water
- 200 g of fresh ginger, grated
- 100 g of red onion, chopped
- 200 g of ghee or coconut oil
- 100 g of toasted almonds
- 1/2 cup of palm sugar
- 1/2 cup of boiled chickpeas
- 1/2 cup of boiled onion
- 1/2 cup of boiled ginger
- 1/2 cup of ground cardamom
- Salt and pepper to taste
Method
- In a large pot, simmer the chicken in water for 20-30 minutes, adding salt and pepper.
- In another pot, heat the coconut oil or ghee, the chopped garlic and grated ginger. Cook on medium heat for 5-7 minutes.
- Add the toasted almonds, palm sugar, chickpeas, garlic, ginger, and ground cardamom. Stir well.
- Add the cooked chicken and its broth. Bring to a boil and cook for 10-15 minutes, stirring occasionally.
- Serve hot, accompanied by white rice.

Opor Ayam Betawi is a specialty from the Jakarta region, found in the Betawi area. Its history dates back to the 18th century, when it was served during special occasions and celebrations.
